A handful of nights each season when the kitchen cooks for one room and one idea. Winemakers pour beside the hearth, the pass opens to twelve seats, and the last Friday of the month belongs to a trio and a fire.

The standing programme
Two nights recur without fail. Neither requires a ticket — a reservation is enough, and the bar keeps a dozen seats back for those who simply arrive.

Oyster Hour
Dollar oysters at the Hearth Bar, shucked to order from whatever came up the coast that morning — Kumamoto, Beau Soleil, Wellfleet, and one wildcard the fishmonger talks us into. Grower Champagne is poured by the glass at cost, because the point of the hour is the room, not the margin.
Twelve stools face the fire and they are first come. The remaining seats are released with the dining room sixty days out.

Live Fire & Live Jazz
The Delphine Trio set up on the Garden Terrace under the retractable roof and play two sets while the hearth runs a shortened, louder menu — flatbread, whole branzino in salt, and a rib for the table.
There is no cover and no minimum. The terrace holds thirty-six seated and roughly sixty standing, and it fills by nine.
