Our Story

Built from a cold room and a stubborn idea

Since 2019

A restaurant built around a single fire

The building is older than the neighborhood's reputation. It was a cutting floor from 1908 until 2016, and the white tile along the west wall is original — we scrubbed it rather than replaced it. Forty-eight seats in the main room, eleven stools at the hearth bar, and one long cellar table beneath the bottles.

The menu is written each morning after the market and printed each afternoon. Nine to eleven dishes change every week, which means the card handed to you on a Tuesday in October will not exist in November. We think that is the point.

Service is unhurried and deliberately quiet. There is no tasting menu you are obliged to accept, no theatre at the table, and no music you have to talk over. What we ask for is two and a half hours and your attention.

The Record

Seven years, three moments

Nothing about this room happened quickly. What follows is the short version, in the order it arrived.

  • 2019
    The doors open

    A shuttered meat locker at 412 West 14th Street becomes a forty-eight seat dining room. Fifty-one covers on the first night, most of them neighbors.

  • 2024
    James Beard semifinalist

    Chef Tomas Lindqvist is named a semifinalist for Best Chef: New York State, and Bon Appétit lists AURUM among the twenty best new restaurants in America.

  • 2025
    Three stars

    The New York Times awards three stars and the Michelin Guide adds one. The hearth is rebuilt over two nights in August and relit before the next service.

Philosophy

Three rules we do not bend

They fit on an index card taped beside the pass, and every cook can recite them by the end of their first week.

Rule I

Fire

One nine-foot hearth, live oak and apple wood, lit at six in the morning and never allowed to go out. Heat is the first seasoning here — measured in inches from the coals rather than in degrees. Every station in the kitchen works around it, and the cooks who tend it rotate every forty minutes.

Rule II

Sourcing

Ten growers and purveyors, nearly all of them within a morning's drive. Produce is bought at the Union Square Greenmarket on Wednesdays, fish comes off the Montauk day boats, and the ducks are raised ninety miles up the Hudson. Nothing is ordered that cannot be traced back to a person we have met.

Rule III

Restraint

A plate leaves the pass with three components, rarely four. Sauces are finished with vinegar rather than cream. Garnish has to earn its place or it is taken off. The discipline of this kitchen lives in what we decline to add.
